Default what is the healthiest flour for baking

I have to start baking everything-brownies-chocolate soufles-cobblers--I"ll probably use splenda but just wondering if anyone has used stuff other than white flour for baking and had good results

I like to use regular flour when I'm baking. If you're baking, BAKE, is my feeling.

because I beleive if I throw in splenda and Protein powder I can somehow create a line of superfoods to diet on--daily chocolate souffles and cobbler minus the side effects of a fat body

there has to be a way...

Daily? I don't think there's a way to eat that no matter what flour you use in addition to the splenda and expect svelte.

Do you use the regular white or the unbleached white?

King Arthur unbleached all-purpose. Nothing else.

I use their whole wheat/whole grain flours too when I'm looking to make a whole grain bread.

I've made a carrot cake with oat flour, milled it myself from regular oats. It was pretty decent. Reason: oats don't contain gluten.
