Banana Protein Pancakes

    Another "invention." :D

    Banana Protein Pancakes

    4 egg whites
    2 oz sweet potato (measure raw, nuke, peel, and throw it in)
    1 oz banana
    1 scoop soy protein powder (one of the few times I use soy.. but it cooks like flour)
    dash banana extract
    dash vanilla extract
    1-2 tsp cinnamon
    3 Splenda

    Toss this all into a food processor, mix, cook like pancakes (makes 3). These are SO good.

    You can add some berries or sugar free maple syrup or just eat them plain. They are portable and I often carry them with me on the go. You can change the macros around by playing with it (3 oz sweet potato and 1/2 scoop protein powder evens out the protein/carb ratio some). You can also cook these into 3 muffins. :)

    i'm assuming vanilla or plain soy protein powder?

    I use unflavored. I don't normally use soy protein powder, but I do for these bacause the texture comes out so much better.
