Italian Summer Vegetable Relish

    Ingredients: 1 cup tomato -- chopped
    1/2 cup mozzarella cheese
    -- diced in 1/2" cubes
    1/2 cup cucumber -- diced
    2 each green onion -- cut
    small
    3 tablespoons olive oil
    4 teaspoons red wine
    vinegar
    2 tablespoons fresh basil --
    chopped fine
    1 teaspoon dried mint
    flakes
    1/4 cup olives -- green,
    black or both -cut in halves
    1 each salt and pepper -- to
    taste

    How To Prepare: Toss everything but the
    cheese together and let
    marinate 15 minutes. Toss
    in cheese just before
    serving. This is excellent,
    served very cold, on a
    grilled chicken breast or
    other grilled meat. You can
    also top lettuce with a few
    spoonsful, making the
    dressing and add-ins in
    one.
