New ideas recipe thread for on plan meals

    Since the refeed thread has taken off I thought I would make an on plan recipe idea list!

    I will start:

    Egg salad sandwich for breakfast: My new favorite

    Eggs( scramble in pan and then throw into blender or magic bullet)

    Add 1/4 diced cucumber
    1 scallion or green onion, chopped
    mustard
    1 tsp ff mayo( I reduced this from a tBSp. so minimal cals. Maybe 3 at most)
    black pepper
    salt
    butter buds or molly mcbutter

    Add all of this to eggs in blender and mix.

    Toast two slices Ezekial bread ( I used the sesame ezekial) and spoon mixture on top. If you don't have any carbs in breakfast you could spoon into romaine lettuce leaves and eat. Or just eat with a spoon.

    soy sauce
    sweetener.....just a small amount b/c I'm an addict

    Chop cooked chicken and mix into cooked veggies. Add soy sauce, ginger and sweetener (if you use it). eat.

    Lean beef ( marinated and sliced)
    mushrooms( can use marinated portabellas because they are steakier and seems like you have more beef)
    garlic , minced
    chinese five spice blend
    onion, chopped
    broccoli, chopped (lots of it)
    crushed red pepper
    sweetener
    soy sauce
    water and beef base blended

    Saute onion, beef , mushrooms, and garlic in notstick pan.

    Then add broccoli, and everything else.

    This is great...since I am so new to it all, I have been eating repeat everything that I know for sure is a safe way to prepare..re: the boring way. Thanks for starting this.

    I use Naturally Fresh Seven Pepper marinade.

    But you could use worchestshire sauce, soy sauce, pepper, , balsamic vinegar, red wine vinegar, lemon , hot sauce,etc.Just to tenderize the meat. . Any combo of these or choose one with a bunch of fresh or dried herbs and spices. Using fresh herbs really helps a lot too. I throw a bunch in a baggie with one of the above liquids and the meat and let it do its job.

    You can also use this tool my husband has that I think the name is a jacarder. Don't know if that is spelled right. Basically it is a bunch of sharp pointy metal spikes that you press down into the meat to tenderize it.

    Baked Italian Ground Turkey Boats

    this is a great recipe to share w/ the family...

    Red peppers
    Italian seasoning
    chopped mushrooms
    chopped onion
    garlic, minced
    can of tomato paste (I don't use this - family will tho!)
    fat free mozz cheese (I don't use this - family will tho!)

    brown ground turkey w/ onion mushroom garlic - add italian seasoning before putting into boats
    cut peppers in half length wise so they are "boats"
    spoon ground turkey mixture on top
    bake til pprs tender, everything nice and hot and steamy

    For the family - spoon tomato paste on top of meat on peppers, top w/ cheese & more italian seasoning and bake til everything hot and melty

    Cashew Crusted Chicken Salad - recipe can be found at www.recipezaar.com - too lazy to look :oops:

    this is another good family & On plan meal....I think I got the measurements correct :oops:

    2 chicken breasts
    cashews coarsely chopped - enough to coat both chix
    1-2 tsp? curry powder
    1/2 C dijon mustard
    1/4 C sugar free apricot preserves (i use a teeny tiny amount on mine for some apricot flava :wink:)

    heat dijon mustard, apricot preserves, curry powder in skillet. dip chix breasts in skillet mixture and coat in cashew pieces. Bake til cooked through.

    Tastes great cut up in spring mix salad...for the family u could add more cashews, dried apricots and monterray jack cheese to the salad to make their meal more complete.

    Chicken & Green Bean PB Stirfry

    chix breasts
    minced garlic
    fresh green beans
    hot asian sauce - tiny bit

    spicy pb sauce: pb, splenda, soy sauce, rice vinegar (not sure if this is clean but I don't normally use it), dash of ginger

    heat sautee garlic and chicken til cooked through. add green beans & hot asian sauce & pb sauce - mix throughly and cook til everything heated through :yum:

    I love pb sauces!

    Baked Balsamic Italian Chicken

    Marinate chix in balsamic vinegar & italian seasoning.
    Bake/ broil on grill pan till cooked through.

    could u use just chopped whole eggs?? the thought of putting my scrambled eggs through the processor skeeves me....egg salad is CHUNKY with chopped eggs :lol3: :shrug:

    Another family to ON PLan recipe from moi :kiss:

    Chili Lime Chicken Burgers

    2 breasts of chicken
    1 tsp Chili powder
    1 garlic clove, minced
    ¼ C egg substitute
    3 tsp lime juice
    2 tsp Mrs. Dash Southwest Chipotle seasoning
    ½ C chopped mushrooms
    ½ C chopped red pepper
    1/3 C chopped Vidalia onion

    Grind the chicken breast in the food processor. Sautee chopped onion & garlic – let cool completely. Mix Chicken with seasonings, egg, lime juice, veggies & onion/garlic mixture. Form into 4-5 patties. Grill or broil, about 5 mins on each side. (I cooked on pan on stove...unsure if they would hold together enough for grill..not sure how to tweak recipe to make them keep together for grill :shrug:)

    On Plan: serve w/ lettuce wrap & cheddar cheese (if on plan) ...

    Family: serve on hamburger buns w/ Sargento Chipotle Cheddar cheese melted on top w/ lettuce tomato, onion & cancer fighting broccoli sprouts!

    This is from Brandy I think - omit tomatoes for On Plan

    Baked Omelette


    Preheat the oven to 350.
    Whatever veggies you like, saute in a ovenproof skillet w/ Pam. I like onions, mushrooms, tomatoes, and spinach. In a seperate bowl, mix your eggs/egg whites-turn burner on LOW. Pour eggs on top of sauteed veggies, and immed. cover w/ skillet lid and place whole thing in oven. (I sprinkle cheese on top-before I cover)
    Bake for 10-15 minutes, until egg is cooked all the way.
