Pandora's Banana Bread Protein Pancakes

    Pandora's Banana Bread Protein Pancakes

    Put into a food processor and mix:
    1/4c oats
    3 egg whites
    1/2 scoop unflavored soy protein powder (whey is fine, but soy makes them fluffy)
    2 oz banana
    .25 oz walnuts
    dash vanilla extract
    dash banana extract (optional, probably)
    Splenda or Stevia
    1/2-1 tsp cinnamon

    Cook on hot nonstick pan until browned on both sides.
    Makes 3 medium sized pancakes. Or bake into muffins.
