    What recipes do you make once the weather starts changing? Here is one I tried a week ago at a party and everyone enjoyed it.

    Butterscotch Apple Crisp
    (I used liquid spray Parkay Margarine with zero calories to cut down on calories)

    Prep: 15 min Ready In: 50 min

    APPLE LAYER

    2 1/2 pounds (about 6 medium) tart apples, peeled and thinly sliced
    1 2/3 cups (11-ounce package) NESTLɮ TOLL HOUSE® Butterscotch Flavored Morsels
    1/4 cup packed brown sugar
    1/4 cup all-purpose flour
    1/2 teaspoon ground cinnamon

    TOPPING

    1/2 cup all-purpose flour
    1/4 cup packed brown sugar
    1/4 cup (1/2 stick) butter or margarine (we recommend LAND O LAKES® Butter)
    1 cup chopped nuts
    3/4 cup quick or old-fashioned oats

    Ice cream or whipped cream (optional)


    PREHEAT oven to 375°F.

    FOR APPLE LAYER:
    ARRANGE apples in 13 x 9-inch baking pan. Combine morsels, sugar,
    flour and cinnamon in small bowl; sprinkle over apples. Bake for
    20 minutes; remove from oven.

    FOR TOPPING:
    COMBINE flour and sugar in medium bowl. Cut in butter with pastry
    blender or two knives until crumbly. Stir in nuts and oats; sprinkle
    over apple layer. Bake for additional 30 to 40 minutes or until
    apples are tender and topping is lightly browned. Cool slightly.
    Serve warm with ice cream.

    Makes 10 to 12 servings

    Baked Brie


    1 small apple
    1/2 c. dried cranberries
    1/4 c sliced or slivered almonds
    1/2 stick butter, melted
    1 tsp cinnamon
    1/4 c brown sugar

    mix above in a bowl

    1 round of brie cheese

    slice the round in half(thru the middle, not like a pie) to make 2 rounds

    place one half of the cheese in a small baking dish......place half of the apple mixture on top of the cheese, cover with other half of brie, top with remaining apple mixture.

    place in a 400 degree oven for 10-15 min until cheese is soft and starts to melt over the sides......

    serve warm with crackers or thin sliced bread.......

    Sweet Brie Appetizer

    1 small Brie wheel - yellow pkging, i think its like 4-5 inches in diameter?
    1 stick of butter
    1 cup brown sugar (there should be more sugar than butter)
    1/4 cup kahlua
    1/2 cup chopped pecans (optional)
    French bread slices and/or thin crackers

    Place butter and brown sugar in a teflon coated pan, this will keep it from burning, cook till bubbling for 3-4 minutes, add kahlua, cook 1 or so minutes, pour over Brie (rind and all). Place Brie in oven and bake until melted (5 mins or so). Pull from oven and serve with bread or crackers. ENJOY!

    PUMPKIN APPLE STREUSEL MUFFINS
    INGREDIENTS
    2 1/2 cups all-purpose flour
    2 cups white sugar
    1 tablespoon pumpkin pie spice
    1 teaspoon baking soda
    1/2 teaspoon salt
    2 eggs, lightly beaten
    1 cup canned pumpkin puree
    1/2 cup vegetable oil
    2 cups peeled, cored and chopped apple

    2 tablespoons all-purpose flour
    1/4 cup white sugar
    1/2 teaspoon ground cinnamon
    4 teaspoons butter



    DIRECTIONS
    Preheat oven to 350 degrees F (175 degrees C). Lightly grease 18 muffin cups or use paper liners.
    In a large bowl, sift together 2 1/2 cups all-purpose flour, 2 cups sugar, pumpkin pie spice, baking soda and salt. In a separate bowl, mix together eggs, pumpkin and oil. Add pumpkin mixture to flour mixture; stirring just to moisten. Fold in apples. Spoon batter into prepared muffin cups.
    In a small bowl, mix together 2 tablespoons flour, 1/4 cup sugar and 1/2 teaspoon cinnamon. Cut in butter until mixture resembles coarse crumbs. Sprinkle topping evenly over muffin batter.
    Bake in preheated oven for 35 to 40 minutes, or until a toothpick inserted into a muffin comes out clean.

    Banana Crumb Muffins ( I add chocolate chips to these)
    INGREDIENTS
    1 1/2 cups all-purpose flour
    1 teaspoon baking soda
    1 teaspoon baking powder
    1/2 teaspoon salt
    3 bananas, mashed
    3/4 cup white sugar
    1 egg, lightly beaten
    1/3 cup butter, melted
    1/3 cup packed brown sugar
    2 tablespoons all-purpose flour
    1/8 teaspoon ground cinnamon
    1 tablespoon butter



    DIRECTIONS
    Preheat oven to 375 degrees F (190 degrees C). Lightly grease 10 muffin cups, or line with muffin papers.
    In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, sugar, egg and melted butter. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
    In a small bowl, mix together brown sugar, 2 tablespoons flour and cinnamon. Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
    Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

    Pumpkin Pancakes

    INGREDIENTS
    2 cups all-purpose flour
    3 tablespoons brown sugar
    2 teaspoons baking powder
    1 teaspoon baking soda
    1 teaspoon ground allspice
    1 teaspoon ground cinnamon
    1/2 teaspoon ground ginger
    1/2 teaspoon salt
    1 1/2 cups milk
    1 cup pumpkin puree
    1 egg
    2 tablespoons vegetable oil
    2 tablespoons vinegar

    DIRECTIONS
    In a separate bowl, mix together the milk, pumpkin, egg, oil and vinegar. Combine the flour, brown sugar, baking powder, baking soda, allspice, cinnamon, ginger and salt, stir into the pumpkin mixture just enough to combine.
    Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

    Spicy Pumpkin Chicken Soup


    • 2 c mashed pumpkin (1 15 oz can)
    • 4 c. chicken broth
    • 1 onion chopped
    • 1 cup chopped/sliced mushrooms
    • 1 cup half & half OR 1/2 cup half and half mixed with 1/2 cup water
    • 1 clove garlic, minced
    • 1/2 t red pepper or to taste
    • light sprinkling of crushed red pepper (optional)
    • 1 pound chicken breast chopped

    Brown chicken in pan, drain, and then add the onion, garlic and pepper. Stir in the pumpkin and mushrooms, then add the broth and mix well. Simmer 20-30 minutes. Stir in the half & half and simmer on low another 10-15 min.

    Pumpkin Pie Cupcakes

    • 1 box spice cake mix
    • 3 eggs per box instructions
    • 1/3 cup veg. oil per box
    • 1 1/3 cup waterper box
    • 1 can pf pumpkin puree
    • fluffy whipped icing

    make spice cake according to box's instructions then beat in the pumpkin. bake 350 for 24-30 mins ( i used silicon baking cups with foil liners so it took about 33 mins) they will puff up then flatten out in to the gooie goodness. so fill them up high.

    cool then ice with the fluffy white icing. next time I'm going to mix cool whip in with the icing. :yum:

    Yum Yum Brownie Muffins


    (1 Muffin, or 3 minis - 180 calories, 2.5g fat, 37 carbs, 2.5g, fiber, 2.5g protein)

    This super-simple 2-ingredient recipe is a Fave!

    1 box devil’s food cake mix
    1 can solid pack pumpkin (15 oz.)

    Directions:
    Mix the two ingredients together. Don't add anything else that may be mentioned on the box, such as eggs, oil, or water. The mixture will be very thick and you will be tempted to add in other things to make the batter smoother. DO NOT DO THIS AS IT WILL RUIN EVERYTHING! Place batter into muffin tins (or mini muffin tins) lined with paper, or sprayed with non-stick spray. Bake at 400 degrees for 20 minutes. Makes 12 regular or 36 mini muffins.

    Apple Pie Bars

    INGREDIENTS (I buy a pie crust and cut it to fit pan - get enough for the top too! Also use sugar-substitute to cut down on calories for white sugar)
    2 1/2 cups all-purpose flour
    1 teaspoon salt
    1 cup butter, chilled
    1 egg yolk
    2/3 cup milk

    1 cup crushed cornflakes or bran cereal
    8 cups thinly sliced apples
    1 cup white sugar
    1 1/2 teaspoons ground cinnamon
    1/2 teaspoon ground nutmeg
    1 egg white
    2 tablespoons white sugar
    1/2 teaspoon ground cinnamon

    1 cup confectioners' sugar
    1 1/2 teaspoons milk
    1/2 teaspoon vanilla extract

    DIRECTIONS
    Preheat oven to 350 degrees F (175 degrees C).
    In a medium bowl, stir together the flour and salt. Cut in the 1 cup butter until mixture is mealy. With a fork, stir in the 2/3 cup milk and egg yolk. Divide dough into 2 equal parts. On a lightly floured surface, roll out 1 piece of dough into a large rectangle. Place on the bottom of a 9x13 inch baking pan.
    Sprinkle cereal over the crust, then layer the apples over the cereal. Stir together the 1 cup of white sugar, and the 1and 1/2 teaspoons of cinnamon and nutmeg; sprinkle over the apple layer. Roll out the other half of the dough and cover everything in the pan. Brush top crust with the reserved egg white and sprinkle with a mixture of 2 tablespoons sugar, and 1/2 teaspoon of cinnamon.
    Bake for 45 minutes to 1 hour in the preheated oven. Top crust should be lightly browned. Mix together the 1 cup of confectioners' sugar, 1 and 1/2 tablespoons of milk, and 1/2 teaspoon of vanilla until smooth; drizzle over bars while they are still warm

    Pumpkin Roll Recipe

    Everyone just loves this Pumpkin Roll Cake made in a jelly roll pan.

    INGREDIENTS:
    3 eggs
    1 cup sugar
    2/3 cups pumpkin
    2/3 cups flour
    1 teaspoon soda
    1 teaspoon pumpkin pie spice
    1 cup powdered sugar
    8 ounces cream cheese
    4 tablespoons butter
    1 teaspoon vanilla

    PREPARATION:
    Preheat oven to 350 degrees. Mix flour, soda and pumpkin pie spice and set aside. Blend eggs, sugar and pumpkin. Add flour mixture and mix well. Spread onto a well-greased jelly roll pan allowing mixture to taper at one end (helps with the rolling once cooked.) Bake for 10-15 minutes.

    Mix remaining ingredients and set aside in refrigerator. Once pumpkin cake is cooled, turn out on a cheese cloth lightly dusted with powdered sugar, roll loosely and let cool (this will help form the roll). Once cooled to room temperature, mix cream cheese mixture to soften. Unroll pumplin cake and spread cream cheese mixture leaving a 1/4" border (the cream cheese will spread and may ooze out the sides once you start to roll. This will save some filling.) Roll pumpkin starting from the tapered end. Powder outside of roll before wrapping in wax paper or foil so not to stick to wrapping and chill for at least 1 hour. When ready to serve slice 1/4" thick and garnish with powdered sugar and cinnamon.
