Vegetarian Protein Stirfry Ingredients: 1 portabella mushroom cap 1.5c frozen or fresh green beans 8 egg whites Green onions 1.5c brown rice (prepare beforehand) garlic olive oil or grapeseed oil ginger powder garlic powder onion powder lite soy sauce pepper 1. Wash & chop portabella cap. Marinate in the following while you prepare the rest of the meal: olive oil, garlic powder, ginger powder, lite soy sauce, and pepper. Set aside. 2. Saute green beans in pan for several minutes and set aside. 3. In same pan, scramble (beaten) egg whites. While egg whites are cooking chop green onions and garlic. When egg whites done, set aside. 4. Add to the pan: brown rice, garlic, and green onions. Add several dashes lite soy sauce. Saute 2-3 mins stirring occasionally. 5. Add green beans and mushrooms to the pan and cook about 5 more minutes. Season as desired. This was pretty good. Took about 15 mins to prepare start to finish. : ) It needs a bit more protein, so feel free to add to it as you want.
