what is the healthiest flour for baking

    I have to start baking everything-brownies-chocolate soufles-cobblers--I"ll probably use splenda but just wondering if anyone has used stuff other than white flour for baking and had good results

    I've used oat flour- works quite well.

    I like to use regular flour when I'm baking. If you're baking, BAKE, is my feeling. :)

    because I beleive if I throw in splenda and Protein powder I can somehow create a line of superfoods to diet on--daily chocolate souffles and cobbler minus the side effects of a fat body

    there has to be a way...

    Daily? I don't think there's a way to eat that no matter what flour you use in addition to the splenda and expect svelte. :nonono:

    King Arthur unbleached all-purpose. Nothing else. :D

    I use their whole wheat/whole grain flours too when I'm looking to make a whole grain bread.

    I've made a carrot cake with oat flour, milled it myself from regular oats. It was pretty decent. Reason: oats don't contain gluten.

    Yep I've done this as well because of the gluten. I don't recommend baking with quinoa flour...ick!

    Espi and I both have gluten issues, so we got off on a little gluten-free tangent.

    I recently tried using coconut flour. . .:yucky: BARFORAMA.
    First I tried pancakes. They tasted like they were made with sand.
    Second, I tried little cookies. They tasted like they'd been made in a litter box.
    Thirdly, I gave the rest of the flour to a pastry chef. . .and HE hasn't been able to make anything with it either.

    So. . . I guess I don't really have any advice other than to tell you not to use coconut flour. :popcorn:

    Things like this already exist and most of them taste like crap...

    I've baked with whole wheat flour and some things were *okay* but not nearly what they would be with white flour.

    Maybe you could try leaning more towards flourless desserts?

    try using half whole wheat pastry flour and half white flour
